Anhui Cuisine is made up of south Anhui, Yanjiang (areas along the Yangtze River) and Yanhuai (areas along the Huaihe River) dishes. South Anhui Cuisine pays special attention to braising, stewing and duration and degree of heating. It has a unique method for cooking braised fish, as shown in dishes like Braised Fish head and ail and Braised Huashui, Yanjiang Cuisine is most notable in the Wuhu and Anqing areas. One of its representative dishes is Shad Smoked with Maofeng Tea Leaves, featuring delicious meat and the flavor of tea. Yanhuai Cuisine, which can be found in Bengbu, Suxian and Fuyang, attaches importance to thick soups like Cream Fish.
