Sitting
at the western end of the Hexi Corridor in Gansu Province,
Dunhuang is one of the most famous historical and cultural
cities in China. The world-renowned Mogao Grottoes and
Mingsha Mountains are both located here.
People in Dunhuang eat noodles as their staple food
throughout the four seasons of the year. The locals
favor mutton, chicken and pork, which are cooked in
such ways to preserve their original flavor. There are
many ways to prepare and eat the noodles, such as the
stretched noodle, rolled noodle, noodle soup, Saozi
Noodle, etc.
