Brief
Introduction |

As
one of China's top four styles of cuisine, Sichuan Cuisine
contains dishes from Chongqing Municipality, Chengdu
and other localities in Sichuan Province. With the distinctive
feature of Sichuan Cuisine-strong flavor-Chongqing dishes
can be divided into 24 types of three categories according
to flavor. The three categories are tingling spicy food,
spicy food and salty-sour-and-sweet-blend food. It has
40 different culinary techniques, such as frying, deep-frying,
stewing, baking, grilling, etc. among its 3,000 typical
dishes are Spicy Meat Shreds, Spicy Stewed Beef, Camphor
and Tea Smoked Duck and Smoked Pork Chop. While maintaining
traditional flavors, Chongqing Cuisine has made innovations
and created new dishes like Pair Hot Pot, Four-Flavored
hot Pot and Sour Pickle Fish. |
